Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the milk. Start and end with the flour mixture. Mix until just combined.
- In another bowl, combine the diced apples, brown sugar, cinnamon, and lemon juice. Toss until the apples are well coated.
- In a medium bowl, mix together the rolled oats, flour, brown sugar, melted butter, and cinnamon. Combine until the mixture resembles coarse crumbs.
- Pour half of the cake batter into the prepared baking pan, spreading it evenly.
- Spoon the apple filling over the batter, spreading it out evenly.
- Pour the remaining cake batter over the apple filling, spreading gently.
- Sprinkle the crumble topping evenly over the top.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 15-20 minutes before cutting.
