Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 1 cup fresh pineapple, diced
  • 8 slices of bacon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness using a meat mallet or rolling pin.
  3. Mix garlic powder, onion powder, smoked paprika, salt, and pepper in a small bowl. Rub the mixture over the chicken breasts.
  4. Wrap each chicken breast with two slices of bacon, covering as much of the chicken as possible. Secure with toothpicks if necessary.
  5. Heat a tablespoon of oil in a large oven-safe skillet over medium-high heat. Sear the bacon-wrapped chicken for 3-4 minutes on each side until the bacon is crispy.
  6. Pour BBQ sauce over the chicken and sprinkle diced pineapple on top.
  7. Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Use a meat thermometer to ensure the chicken is cooked through. If not, bake for an additional 5-10 minutes.
  9. Let the chicken rest for 5 minutes before serving. Garnish with fresh cilantro or parsley if desired.
  10. Serve on a platter or individual plates, drizzling extra BBQ sauce on top if desired.
  11. Enjoy with grilled vegetables, coleslaw, corn on the cob, rice, or a fresh garden salad.

Notes

  • For added flavor, consider marinating the chicken in BBQ sauce for a few hours before cooking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
