Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed bananas, granulated sugar, and brown sugar. Mix until well combined.
  3. Add the melted butter to the banana mixture and stir until fully incorporated.
  4. Crack in the egg and pour in the vanilla extract. Mix until smooth.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. The dough should be thick and slightly sticky.
  7. In a small bowl, combine the brown sugar and ground cinnamon. Mix until well blended.
  8. Spread the softened butter evenly over the surface of the dough.
  9. Sprinkle the cinnamon-sugar mixture evenly over the buttered dough.
  10. Roll the dough into a tight log, starting from one end and rolling towards the other.
  11. Cut the log into 1-inch thick slices using a sharp knife or dental floss.
  12. Place the sliced rolls into a greased 9×13 inch baking dish, leaving space between each roll.
  13. Cover the baking dish with a clean kitchen towel and let the rolls rise in a warm place for about 30-45 minutes.
  14. While the rolls are rising, prepare the cream cheese glaze by beating together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth.
  15. Once the rolls have risen, bake in the preheated oven for 25-30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  16. If they start to brown too quickly, cover loosely with aluminum foil.

Notes

  • Ensure the bananas are ripe for the best flavor and sweetness.
  • You can adjust the amount of cinnamon in the filling according to your taste preference.
  • These rolls are best enjoyed fresh but can be stored in an airtight container for a few days.
