- 12 large jalapeño peppers
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)

- 1/2 cup cream cheese, softened
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil for drizzling
- Optional: sour cream and lime wedges for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the jalapeño peppers in half lengthwise and remove the seeds and membranes using a small spoon or jalapeño corer. Wear gloves to avoid irritation.
- In a large mixing bowl, combine the drained black beans and corn. Mash some of the black beans for a creamier texture if desired.
- Add the softened cream cheese and mix until fully incorporated.
- Stir in the shredded cheese, chopped cilantro, ground cumin, garlic powder, smoked paprika, and season with salt and pepper to taste.
- Mix until the filling is thick and creamy with all ingredients evenly distributed.
- Stuff each jalapeño half with the bean mixture, packing it in generously.
- Place the stuffed jalapeños on a baking sheet lined with parchment paper.
- Drizzle olive oil over the stuffed jalapeños and sprinkle extra cheese on top if desired.
- Bake in the preheated oven for 20-25 minutes until the jalapeños are tender and the cheese is melted and bubbly.
- For a charred finish, switch to broil for the last 2-3 minutes, watching closely to prevent burning.
- Remove from the oven and let cool for a few minutes.
- Serve warm, garnished with additional chopped cilantro, sour cream, and lime wedges if desired.
