- 1 pound beef sirloin, thinly sliced against the grain
- 1 medium head of Napa cabbage, chopped into bite-sized pieces
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 bell pepper, sliced (any color you prefer)
- 1 cup carrots, julienned
- 1 cup snow peas, trimmed
- 3 green onions, chopped (white and green parts separated)
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1 tablespoon water
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions
- In a medium bowl, combine the sliced beef with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and a pinch of salt and pepper. Mix well until the beef is evenly coated. Let it marinate for about 15-20 minutes while you prepare the other ingredients.
- While the beef is marinating, wash and chop the Napa cabbage into bite-sized pieces. Set aside. Slice the bell pepper into thin strips and julienne the carrots. Trim the snow peas and chop the green onions, keeping the white and green parts separate.
- Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Once the oil is hot, add the marinated beef in a single layer. Let it sear for about 2-3 minutes without stirring, allowing it to develop a nice brown color. Stir-fry the beef for another 2-3 minutes until it is cooked through. Remove the beef from the skillet and set it aside on a plate.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stirring quickly for about 30 seconds until fragrant. Be careful not to burn them! Next, add the chopped Napa cabbage, bell pepper, carrots, and snow peas. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp. Add the white parts of the green onions and stir for another minute.
- Return the cooked beef to the skillet with the vegetables. In a small bowl, mix the remaining 2 tablespoons of soy sauce, oyster sauce, and 1 tablespoon of water. Pour this sauce over the beef and vegetables. Stir everything together, ensuring the beef and vegetables are well coated with the sauce. Cook for an additional 2-3 minutes to heat everything through.
- If you prefer a thicker sauce, mix an additional teaspoon of cornstarch with a tablespoon of water in a small bowl. Pour this mixture into the skillet while stirring continuously. Cook for another minute until the sauce thickens to your desired consistency.
- Taste the stir-fry and adjust the seasoning with more salt, pepper, or soy sauce if needed. Once everything is well combined and heated through, remove the skillet from the heat.
