- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup breadcrumbs (gluten-free if needed)
- 1/2 cup cooked quinoa (optional, for added texture and nutrition)
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 tablespoon soy sauce or tamari (for gluten-free)
- 1 tablespoon olive oil (plus more for cooking)
- Salt and pepper to taste
- 4 whole grain burger buns
- Optional toppings: lettuce, tomato, avocado, pickles, cheese, or your favorite sauce
Instructions
- In a large mixing bowl, add the drained and rinsed black beans. Using a fork or a potato masher, mash the beans until they are mostly smooth but still have some texture.
- Add the cooked quinoa (if using), breadcrumbs, chopped onion, minced garlic, ground cumin, smoked paprika, cayenne pepper, soy sauce, and olive oil to the mashed beans. Season with salt and pepper to taste.
- Mix everything together until well combined. Use your hands for even distribution. If the mixture feels too wet, add more breadcrumbs.
- Cover the bowl with plastic wrap or a lid and let it sit in the refrigerator for at least 30 minutes.
- Remove the mixture from the refrigerator. Divide it into four equal portions.
- Shape each portion into a patty, pressing firmly to hold together. If too crumbly, add a little water or olive oil.
- Place the patties on a plate or a baking sheet lined with parchment paper. Cover and store in the fridge for up to a day or freeze for later use.
- Heat a large skillet over medium heat and add a drizzle of olive oil.
- Carefully place the patties in the skillet, avoiding overcrowding.
- Cook for about 4-5 minutes on one side until golden brown and crispy. Flip gently and cook for another 4-5 minutes on the other side.
- If adding cheese, place a slice on top during the last minute of cooking and cover the skillet to help it melt.
- Toast your burger buns if desired.
- Place each cooked patty on a bun and add your favorite toppings.
