  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chopped nuts (optional, walnuts or pecans work well)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together rolled oats, all-purpose flour, baking soda, baking powder, salt, and cinnamon (if using).
  3. In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed for 2-3 minutes until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and beat on low speed until just combined.
  5. Gradually add the dry ingredients to the wet ingredients in three parts, mixing on low speed until just combined.
  6. Gently fold in blueberries and chopped nuts (if using) with a spatula.
  7. For thicker cookies, chill the dough in the refrigerator for at least 30 minutes.
  8. Line two baking sheets with parchment paper.
  9. Drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten slightly with the back of the scoop.
  10. Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden and centers look set.
  11. Let the cookies cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely.
  12. Store in an airtight container at room temperature for up to a week or freeze for up to three months.
