  • 1 cup diced potatoes (preferably Yukon Gold)
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onion
  • 1/2 cup cooked and crumbled breakfast sausage (or bacon)
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Wash the potatoes thoroughly and dice them into small cubes (about 1/2 inch). Chop the bell peppers and onion into similar-sized pieces.
  2. In a skillet over medium heat, cook raw sausage until browned and fully cooked. If using pre-cooked sausage, crumble it into smaller pieces. Set aside on a paper towel-lined plate.
  3. Grate the cheddar cheese if using a block. Pre-shredded cheese is fine, but freshly grated melts better.
  4. In a large, oven-safe skillet, heat olive oil over medium heat until hot.
  5. Add diced potatoes to the skillet, season with salt and pepper, and cook for 10-15 minutes until golden brown and tender, stirring occasionally. Cover with a lid to speed up cooking if desired.
  6. Add diced bell peppers and onions to the skillet, stirring to combine. Cook for another 5-7 minutes until softened.
  7. Mix the cooked sausage back into the skillet with the potatoes and vegetables.
  8. Use a spatula to create four small wells in the mixture.
  9. Crack an egg into each well. Alternatively, scramble the eggs in a bowl and pour them over the mixture.
  10. Sprinkle salt and pepper over the eggs. Add hot sauce or red pepper flakes if desired.
  11. Cover the skillet with a lid and cook for 5-7 minutes until the eggs are cooked to your liking.
  12. Sprinkle shredded cheddar cheese over the top and cover again for 1-2 minutes until melted.
  13. Remove from heat and garnish with chopped parsley or chives if desired.
  14. Serve directly from the skillet with crusty bread or toast.
