  • 1 tablespoon olive oil (for frying)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash the broccoli florets thoroughly under cold water.
  2. Chop the broccoli into small, bite-sized pieces.
  3. Bring a pot of water to a boil, add a pinch of salt, and blanch the chopped broccoli for 2-3 minutes.
  4. Transfer the broccoli to a bowl of ice water to stop the cooking process. Drain and pat dry.
  5. In a large mixing bowl, combine the blanched broccoli, cheddar cheese, Parmesan cheese, and breadcrumbs.
  6. Add minced garlic, onion powder, salt, black pepper, and red pepper flakes (if using). Mix well.
  7. Crack the eggs into the mixture and mix until fully incorporated and sticky.
  8. Use a cookie scoop or your hands to shape the mixture into balls (about 1-2 tablespoons each).
  9. Place the balls on a baking sheet lined with parchment paper.
  10. Heat olive oil in a large skillet over medium heat.
  11. Add the broccoli cheese balls to the skillet, cooking in batches if necessary.
