- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- 1 tablespoon olive oil (for frying)
- Fresh parsley, chopped (for garnish)
Instructions
- Wash the broccoli florets thoroughly under cold water.
- Chop the broccoli into small, bite-sized pieces.
- Bring a pot of water to a boil, add a pinch of salt, and blanch the chopped broccoli for 2-3 minutes.
- Transfer the broccoli to a bowl of ice water to stop the cooking process. Drain and pat dry.
- In a large mixing bowl, combine the blanched broccoli, cheddar cheese, Parmesan cheese, and breadcrumbs.
- Add minced garlic, onion powder, salt, black pepper, and red pepper flakes (if using). Mix well.
- Crack the eggs into the mixture and mix until fully incorporated and sticky.
- Use a cookie scoop or your hands to shape the mixture into balls (about 1-2 tablespoons each).
- Place the balls on a baking sheet lined with parchment paper.
- Heat olive oil in a large skillet over medium heat.
- Add the broccoli cheese balls to the skillet, cooking in batches if necessary.
- Cook for 3-4 minutes on each side until golden brown and crispy. Transfer to a plate lined with paper towels.
- Sprinkle the warm cheese balls with freshly chopped parsley.
- Serve with your favorite dipping sauce, such as ranch or sriracha mayo.
