  • Brown sugar sprinkles

Instructions

  1. In a small saucepan, combine the packed light brown sugar, water, and a pinch of sea salt.
  2. Place the saucepan over medium heat. Stir constantly until the brown sugar is completely dissolved and the mixture comes to a gentle simmer. This usually takes about 3-5 minutes. Make sure there are no sugar granules left at the bottom of the pan.
  3. Once simmering, reduce the heat to low and let it simmer for another 1-2 minutes. This will help the syrup thicken slightly. Don’t overcook it, or it will become too thick when it cools.
  4. Remove the saucepan from the heat and let the syrup cool completely. As it cools, it will thicken to a syrup-like consistency. This usually takes about 15-20 minutes.
  5. Once cooled, transfer the brown sugar syrup to an airtight container (a small jar works perfectly). You can store it in the refrigerator for up to 2 weeks.
  6. Brew two shots of espresso using your preferred method (espresso machine, Moka pot, or even a strong instant espresso). The key is to have a concentrated coffee flavor.
  7. Pour the freshly brewed espresso into your cocktail shaker. Add 1-2 tablespoons of the cooled brown sugar syrup, depending on your desired sweetness. I usually start with 1 tablespoon and adjust to taste.
  8. Fill the cocktail shaker with ice cubes. You want enough ice to chill the espresso quickly and create that frothy texture.
  9. Secure the lid of the cocktail shaker tightly. Shake vigorously for about 20-30 seconds. You should hear the ice rattling around and feel the shaker getting very cold. This is crucial for creating the signature shaken espresso texture. Don’t be afraid to put some muscle into it!
  10. Fill a glass with ice cubes. The amount of ice depends on your preference, but I usually fill it about halfway.
