  • 1 cup all-purpose flour

  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1 cup buffalo sauce (store-bought or homemade)
  • 4 sandwich buns (preferably brioche or potato buns)
  • 1 cup shredded lettuce
  • 1/2 cup sliced tomatoes
  • 1/2 cup blue cheese or ranch dressing (optional)
  • Vegetable oil for frying

Instructions

  1. Pound the chicken breasts to an even thickness of about 1/2 inch between two sheets of plastic wrap or parchment paper.
  2. Season both sides with salt, pepper, garlic powder, onion powder, and paprika.
  3. Set up a breading station with flour in one bowl, beaten eggs in a second bowl, and breadcrumbs in a third bowl.
  4. Dip each piece of seasoned chicken into the flour, then the eggs, and finally coat with breadcrumbs, pressing gently to adhere.
  5. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
  6. Fry the breaded chicken pieces for 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
  7. Transfer to a plate lined with paper towels to drain excess oil.
  8. In a large bowl, toss the cooked chicken in buffalo sauce until fully coated. For a milder flavor, mix the buffalo sauce with melted butter before tossing.
  9. Toast the sandwich buns lightly.
  10. Spread blue cheese or ranch dressing on the bottom half of each bun.
  11. Place a piece of buffalo chicken on top, followed by shredded lettuce and sliced tomatoes.
  12. Top with the other half of the bun and secure with a toothpick if desired.
