These crispy Buffalo Chicken Sandwiches feature tender, breaded chicken tossed in spicy buffalo sauce, served on toasted buns with fresh lettuce and tomatoes. Ideal for game day or a quick weeknight dinner!

- 1 pound boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 1 cup buffalo sauce (store-bought or homemade)
- 4 sandwich buns (preferably brioche or potato buns)
- 1 cup shredded lettuce
- 1/2 cup sliced tomatoes
- 1/2 cup blue cheese or ranch dressing (optional)
- Vegetable oil for frying
Instructions
- Pound the chicken breasts to an even thickness of about 1/2 inch between two sheets of plastic wrap or parchment paper.
- Season both sides with salt, pepper, garlic powder, onion powder, and paprika.
- Set up a breading station with flour in one bowl, beaten eggs in a second bowl, and breadcrumbs in a third bowl.
- Dip each piece of seasoned chicken into the flour, then the eggs, and finally coat with breadcrumbs, pressing gently to adhere.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
- Fry the breaded chicken pieces for 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
- Transfer to a plate lined with paper towels to drain excess oil.
- In a large bowl, toss the cooked chicken in buffalo sauce until fully coated. For a milder flavor, mix the buffalo sauce with melted butter before tossing.
- Toast the sandwich buns lightly.
- Spread blue cheese or ranch dressing on the bottom half of each bun.
- Place a piece of buffalo chicken on top, followed by shredded lettuce and sliced tomatoes.
- Top with the other half of the bun and secure with a toothpick if desired.
- Serve immediately with crispy fries or a side salad.
- Offer extra buffalo sauce on the side for dipping, and feel free to add pickles or jalapeños for an extra kick.

- For a crunchier texture, use panko breadcrumbs.
- Adjust the amount of buffalo sauce to your spice preference.
