  • 1 cup granulated sugar
  • 2 large eggs

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips
  • 1/2 cup chopped nuts (optional, pecans or walnuts recommended)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, pour in the melted butter.
  3. Add the brown sugar and granulated sugar to the melted butter, whisking until smooth and glossy.
  4. Crack in the eggs, one at a time, whisking well after each addition.
  5. Mix in the vanilla extract until fully combined.
  6. In a separate bowl, sift together the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  8. Fold in the butterscotch chips and optional chopped nuts.
  9. Grease a 9×13 inch baking dish with butter or cooking spray.
  10. Line the bottom of the pan with parchment paper, leaving overhang for easy removal.
  11. Pour the batter into the prepared baking dish, spreading it evenly.
  12. Bake for 25-30 minutes, checking for doneness at the 25-minute mark. The edges should be golden brown, and a toothpick inserted in the center should come out with a few moist crumbs.
  13. Remove from the oven and let cool in the pan for 10 minutes.
