- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract (optional)
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar, for rolling (optional)
- 1/4 cup sprinkles (optional)
Instructions
- Cream the Butter: In a large bowl, cream together the softened butter and cake mix using an electric mixer on medium speed until light and fluffy (2-3 minutes). Scrape down the sides of the bowl occasionally.
- Add the Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Incorporate the Flour: Gradually add the all-purpose flour to the mixture, mixing on low speed until just combined. Be careful not to overmix.
- Chill the Dough: Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes (up to a few hours).
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Prepare Sugar and Sprinkles (Optional): Place granulated sugar and sprinkles (if using) in separate small bowls.
- Scoop the Dough: Use a cookie scoop or spoon to scoop out rounded tablespoons of dough.
- Roll in Sugar (Optional): Roll each ball of dough in the granulated sugar and/or sprinkles, coating evenly.
- Place on Baking Sheet: Place the sugared (or sprinkled) dough balls onto the prepared baking sheet, leaving about 2 inches between each cookie.
- Bake: Bake for 8-10 minutes, or until the edges of the cookies are lightly golden brown.
- Cool: Remove the baking sheet from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
