- 1 cup tahini
- 1/2 cup maple syrup
- 1/2 cup unsweetened cocoa powder
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1/2 cup chopped nuts (such as almonds or walnuts) for rolling
- 1/4 cup unsweetened shredded coconut for rolling (optional)
- 1/4 cup cacao nibs for rolling (optional)
Instructions
- In a large mixing bowl, combine 1 cup of tahini and 1/2 cup of maple syrup. Whisk until smooth and creamy.
- Add 1/2 cup of unsweetened cocoa powder and whisk until fully incorporated.
- Pour in 1/4 cup of melted coconut oil, ensuring its not too hot, and mix well.
- Stir in 1 teaspoon of vanilla extract and 1/4 teaspoon of sea salt until you have a smooth, thick mixture.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to firm up the mixture.
- Prepare a rolling station with chopped nuts, shredded coconut, and cacao nibs in separate shallow bowls.
- Scoop out about 1 tablespoon of the chilled mixture and roll it into a ball.
- Roll the truffle ball in your choice of coating.
- Place the coated truffle on a parchment-lined baking sheet. Repeat until all the mixture is rolled and coated (about 20-25 truffles).
- Cover the baking sheet with plastic wrap or foil and refrigerate for another 30 minutes to set the coatings.
- Let the truffles sit at room temperature for 5-10 minutes before serving.
- Arrange on a serving platter and garnish with a sprinkle of sea salt or a drizzle of melted chocolate if desired.
