Sweet and spicy cinnamon roll syrup meets creamy cream cheese icing and your favorite coffee in this decadent homemade iced coffee treat.
Ingredients
Scale
- 1 cup granulated sugar
- 1 cup water
- 2 cinnamon sticks
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg
- 4 cups strong brewed coffee, cooled
- 1 cup milk (dairy or non-dairy)
- Ice cubes
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons milk (to adjust consistency)
- Cinnamon powder
- Whipped cream
- Cinnamon roll pieces
Instructions
- In a medium saucepan, combine the granulated sugar, water, cinnamon sticks, and ground nutmeg.
- Place the saucepan over medium-high heat and bring the mixture to a boil, stirring occasionally to dissolve the sugar.
- Once boiling, reduce the heat to low and let the syrup simmer for about 10-15 minutes.
- After simmering, remove the saucepan from the heat and let the syrup cool completely.
- Once the syrup is cool, strain it through a fine-mesh sieve to remove the cinnamon sticks and any sediment. Then, stir in the vanilla extract.
- Pour the cinnamon roll syrup into an airtight container or jar. You can store it in the refrigerator for up to 2 weeks.
- Make sure your cream cheese and butter are softened to room temperature before you start.
- In a mixing bowl (or using a stand mixer), beat the softened cream cheese and butter together until they are light and fluffy.
- Gradually add the powdered sugar to the cream cheese and butter mixture, beating on low speed until it is fully incorporated.
- Stir in the vanilla extract. Then, add the milk, one tablespoon at a time, until you reach your desired consistency.
- If the icing is too thick, add a little more milk. If it’s too thin, add a little more powdered sugar.
- If you want to get fancy, you can transfer the cream cheese icing to a piping bag fitted with a small round tip.
- Fill a tall glass with ice cubes.
- Pour about 2-3 tablespoons of cinnamon roll syrup over the ice.
- Pour the cooled brewed coffee over the ice and syrup.
- Pour in the milk.
- Drizzle the cream cheese icing over the top of the iced coffee.
- If you want to get extra fancy, you can garnish your iced coffee with a sprinkle of cinnamon powder, a dollop of whipped cream, or even a few small pieces of cinnamon roll.
- Finally, give your iced coffee a good stir to combine all the flavors. Then, grab a straw and enjoy!
