  • 4 cloves garlic, minced

  • 1 teaspoon salt

  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into wedges
  • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions

  1. In a large mixing bowl, combine the fresh orange juice, lemon juice, and lime juice.
  2. Add the olive oil, honey, minced garlic, ground cumin, smoked paprika, salt, black pepper, and red pepper flakes (if using). Whisk until well combined.
  3. Add the cubed chicken to the marinade, ensuring all pieces are well coated. Use your hands for thorough mixing.
  4. Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Marinate in the refrigerator for at least 1 hour, preferably 4 hours or overnight.
  5. Wash and cut the red and green bell peppers into 1-inch pieces, removing seeds and membranes.
  6. Peel the red onion and cut it into wedges, keeping them large for better skewering.
  7. Set the prepared vegetables aside while the chicken marinates.
  8. Preheat your grill to medium-high heat (or heat a grill pan over medium-high heat).
  9. Thread the marinated chicken and vegetables onto the skewers, alternating between chicken and vegetables for a colorful presentation. Leave space between each piece for even cooking.
  10. Repeat until all chicken and vegetables are used, yielding about 4-6 skewers.
  11. Place the kebabs on the hot grill, ensuring space between each skewer.
  12. Cook for about 10-12 minutes, turning every few minutes until the chicken is no longer pink in the center and reaches an internal temperature of 165°F (75°C).
  13. If using a grill pan, the cooking time will be similar.
