- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 medium red onion, cut into wedges
- Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)
Instructions
- In a large mixing bowl, combine the fresh orange juice, lemon juice, and lime juice.
- Add the olive oil, honey, minced garlic, ground cumin, smoked paprika, salt, black pepper, and red pepper flakes (if using). Whisk until well combined.
- Add the cubed chicken to the marinade, ensuring all pieces are well coated. Use your hands for thorough mixing.
- Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Marinate in the refrigerator for at least 1 hour, preferably 4 hours or overnight.
- Wash and cut the red and green bell peppers into 1-inch pieces, removing seeds and membranes.
- Peel the red onion and cut it into wedges, keeping them large for better skewering.
- Set the prepared vegetables aside while the chicken marinates.
- Preheat your grill to medium-high heat (or heat a grill pan over medium-high heat).
- Thread the marinated chicken and vegetables onto the skewers, alternating between chicken and vegetables for a colorful presentation. Leave space between each piece for even cooking.
- Repeat until all chicken and vegetables are used, yielding about 4-6 skewers.
- Place the kebabs on the hot grill, ensuring space between each skewer.
- Cook for about 10-12 minutes, turning every few minutes until the chicken is no longer pink in the center and reaches an internal temperature of 165°F (75°C).
- If using a grill pan, the cooking time will be similar.
