  • 1 cup breadcrumbs (preferably plain)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon ketchup (plus extra for topping)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bell pepper, finely chopped (optional)
  • 1 cup green beans (for side dish)
  • 4 medium potatoes (for mashed potatoes)
  • 4 tablespoons butter (for mashed potatoes)
  • ½ cup milk (for mashed potatoes)
  • Salt and pepper to taste (for mashed potatoes)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, Worcestershire sauce, ketchup, salt, black pepper, thyme, and oregano. If using bell pepper, add that in as well.
  3. Mix all the ingredients together until just combined, being careful not to overmix.
  4. Shape the mixture into a loaf and place it in a greased baking dish or lined baking sheet.
  5. Spread a thin layer of ketchup on top of the meatloaf.
  6. Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  7. Check on the meatloaf about 10 minutes before it’s done; cover loosely with aluminum foil if the top is browning too quickly.
  8. Let the meatloaf rest for about 10 minutes before slicing.
  9. Peel and cut the potatoes into evenly sized chunks.
  10. Place the potato chunks in a large pot, cover with cold water, and add a pinch of salt.
  11. Bring to a boil, then reduce heat and simmer for 15-20 minutes until fork-tender.
  12. Drain the potatoes and return them to the pot to evaporate excess moisture.
  13. Add butter and milk, then mash until creamy. Season with salt and pepper to taste.
  14. Trim and rinse fresh green beans or prepare frozen ones.
  15. In a medium saucepan, bring about an inch of water to a boil. Add the green beans and cover.
  16. Steam for 5-7 minutes until bright green and tender-crisp.
  17. Drain and toss with butter, salt, and pepper.
  18. Slice the meatloaf and serve with mashed potatoes and green beans. Drizzle any remaining juices over the meatloaf.

Notes

  • Feel free to customize the meatloaf by adding your favorite vegetables or spices.
  • Leftover meatloaf can be stored in the refrigerator for up to 3 days and is great for sandwiches.
