  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sweetened condensed milk
  • 1/2 cup chopped nuts (optional, pecans or almonds recommended)
  • 1/2 teaspoon baking powder
  • 1/4 cup additional shredded coconut for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8 inch baking dish with butter or line it with parchment paper.
  3. In a medium bowl, whisk together the flour, shredded coconut, sugar, salt, and baking powder until well combined.
  4. In a large bowl, whisk together the melted butter, eggs, and vanilla extract until smooth.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Fold in nuts if using.
  6. In another bowl, mix the sweetened condensed milk with the remaining shredded coconut.
  7. Pour half of the batter into the prepared baking dish, spread evenly, then pour the coconut mixture over it. Finally, pour the remaining batter on top and spread carefully.
  8. Sprinkle the additional shredded coconut on top of the final layer of batter.
  9. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  10. Let the bars cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  11. Once cool, cut into squares or rectangles.
  12. Enjoy immediately or store in an airtight container at room temperature for up to a week. These bars also freeze well.
