- 1 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sweetened condensed milk
- 1/2 cup chopped nuts (optional, pecans or almonds recommended)
- 1/2 teaspoon baking powder
- 1/4 cup additional shredded coconut for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Grease an 8×8 inch baking dish with butter or line it with parchment paper.
- In a medium bowl, whisk together the flour, shredded coconut, sugar, salt, and baking powder until well combined.
- In a large bowl, whisk together the melted butter, eggs, and vanilla extract until smooth.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Fold in nuts if using.
- In another bowl, mix the sweetened condensed milk with the remaining shredded coconut.
- Pour half of the batter into the prepared baking dish, spread evenly, then pour the coconut mixture over it. Finally, pour the remaining batter on top and spread carefully.
- Sprinkle the additional shredded coconut on top of the final layer of batter.
- Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Let the bars cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Once cool, cut into squares or rectangles.
- Enjoy immediately or store in an airtight container at room temperature for up to a week. These bars also freeze well.
