Instructions

  1. Thinly slice the cabbage, removing the core. Aim for about 6 cups.
  2. Core and dice the apples into small pieces.
  3. In a large bowl, combine shredded cabbage, diced apples, dried cranberries, nuts (if using), and parsley.
  4. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey/maple syrup, and Dijon mustard.
  5. Stir in celery seeds, salt, and pepper.
  6. Adjust sweetness, tanginess, and seasoning to your preference.
  7. Pour dressing over the coleslaw mixture, starting with half and adding more as needed.
  8. Toss gently until all ingredients are evenly coated.
  9. Cover and refrigerate for at least 30 minutes (preferably 1-2 hours).
  10. Before serving, toss and add more dressing if needed. Garnish with fresh parsley or nuts.
