- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
- 8 ounces fettuccine or pasta of your choice
Instructions
- Bring a large pot of salted water to a boil.
- Add the fettuccine (or your chosen pasta) and cook according to package instructions until al dente (about 8-10 minutes).
- Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside. Toss with a little olive oil to prevent sticking.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the shrimp in a single layer and cook for 2-3 minutes on one side until pink and opaque. Flip and cook for another 2-3 minutes.
- Remove the shrimp from the skillet and cover with foil to keep warm.
- In the same skillet, pour in the chicken broth and bring to a simmer.
- Reduce heat to medium-low and stir in the heavy cream.
- Add paprika and Italian seasoning, then season with salt and pepper to taste.
- Simmer for about 5 minutes, stirring occasionally, until the sauce thickens slightly.
- Stir in the grated Parmesan cheese until melted into the sauce.
- Return the cooked shrimp to the skillet, along with any accumulated juices, and stir to coat.
- Add the cooked pasta and toss until well coated. If the sauce is too thick, add reserved pasta water a few tablespoons at a time until desired consistency is reached.
- Taste and adjust seasoning if necessary. A squeeze of lemon juice can brighten the flavors.
- Serve immediately, garnished with fresh parsley. Enjoy with crusty bread to soak up the sauce.
