  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth

  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 8 ounces fettuccine or pasta of your choice

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the fettuccine (or your chosen pasta) and cook according to package instructions until al dente (about 8-10 minutes).
  3. Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside. Toss with a little olive oil to prevent sticking.
  4. In a large skillet, heat the olive oil over medium-high heat.
  5. Add the minced garlic and sauté for about 30 seconds until fragrant.
  6. Add the shrimp in a single layer and cook for 2-3 minutes on one side until pink and opaque. Flip and cook for another 2-3 minutes.
  7. Remove the shrimp from the skillet and cover with foil to keep warm.
  8. In the same skillet, pour in the chicken broth and bring to a simmer.
  9. Reduce heat to medium-low and stir in the heavy cream.
  10. Add paprika and Italian seasoning, then season with salt and pepper to taste.
  11. Simmer for about 5 minutes, stirring occasionally, until the sauce thickens slightly.
  12. Stir in the grated Parmesan cheese until melted into the sauce.
  13. Return the cooked shrimp to the skillet, along with any accumulated juices, and stir to coat.
  14. Add the cooked pasta and toss until well coated. If the sauce is too thick, add reserved pasta water a few tablespoons at a time until desired consistency is reached.
  15. Taste and adjust seasoning if necessary. A squeeze of lemon juice can brighten the flavors.
  16. Serve immediately, garnished with fresh parsley. Enjoy with crusty bread to soak up the sauce.
