- 8 oz udon noodles
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 cups mushrooms (shiitake, cremini, or button), sliced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Chopped green onions for garnish
- Sesame seeds for garnish (optional)
Instructions
- Bring a large pot of water to a boil.
- Add the udon noodles and cook according to package instructions (about 8-10 minutes). Stir occasionally.
- Drain and rinse under cold water. Set aside.
- In a large skillet or wok, heat olive oil over medium-high heat.
- Add chicken pieces, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through.
- Remove chicken from skillet and set aside.
- In the same skillet, melt butter.
- Add chopped onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and sliced mushrooms, cooking for another 5-6 minutes until mushrooms are tender.
- Pour in chicken broth and bring to a gentle simmer.
- Reduce heat to low, stir in heavy cream, soy sauce, oyster sauce, and sesame oil. Mix well.
- Let simmer for about 5 minutes until slightly thickened.
- Add cooked chicken back into the skillet, stirring to coat.
- Add udon noodles and gently toss to combine.
- Cook for an additional 2-3 minutes until heated through.
- Taste and adjust seasoning with salt and pepper.
- Remove from heat and serve hot, garnished with green onions and sesame seeds if desired.
Notes
- Feel free to substitute the chicken with shrimp or tofu for a different protein option.
- You can add other vegetables like bell peppers or spinach for extra nutrition.
- Adjust the level of creaminess by adding more or less heavy cream according to your preference.
