  • 8 oz udon noodles
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 cups mushrooms (shiitake, cremini, or button), sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Sesame seeds for garnish (optional)

Instructions

  1. Bring a large pot of water to a boil.
  2. Add the udon noodles and cook according to package instructions (about 8-10 minutes). Stir occasionally.
  3. Drain and rinse under cold water. Set aside.
  4. In a large skillet or wok, heat olive oil over medium-high heat.
  5. Add chicken pieces, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through.
  6. Remove chicken from skillet and set aside.
  7. In the same skillet, melt butter.
  8. Add chopped onion and sauté for 3-4 minutes until translucent.
  9. Add minced garlic and sliced mushrooms, cooking for another 5-6 minutes until mushrooms are tender.
  10. Pour in chicken broth and bring to a gentle simmer.
  11. Reduce heat to low, stir in heavy cream, soy sauce, oyster sauce, and sesame oil. Mix well.
  12. Let simmer for about 5 minutes until slightly thickened.
  13. Add cooked chicken back into the skillet, stirring to coat.
  14. Add udon noodles and gently toss to combine.
  15. Cook for an additional 2-3 minutes until heated through.
  16. Taste and adjust seasoning with salt and pepper.
  17. Remove from heat and serve hot, garnished with green onions and sesame seeds if desired.
