Ingredients
Scale
- 1 pound chicken tenders
- 1 cup plain Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup breadcrumbs (preferably panko for extra crunch)
- ½ cup grated Parmesan cheese
- Cooking spray or additional olive oil for baking
Instructions
- Place the chicken tenders in a large mixing bowl.
- In a separate bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper. Whisk until well blended.
- Pour the marinade over the chicken tenders, ensuring each piece is thoroughly coated. Use your hands to mix well.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour (or up to overnight for enhanced flavor).
- Preheat your oven to 400°F (200°C).
- In a shallow dish, combine breadcrumbs and grated Parmesan cheese. Mix until well combined.
- Remove the marinated chicken from the refrigerator and let it sit at room temperature for about 10 minutes.
- Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.
- Dip each marinated chicken tender into the breadcrumb mixture, pressing gently to ensure adherence. Shake off excess breadcrumbs and place on the baking sheet.
- Lightly spray the tops of the chicken tenders with cooking spray or drizzle with olive oil.
- Bake in the preheated oven for 20-25 minutes, or until cooked through and crispy (internal temperature should reach 165°F/75°C).
- Flip the chicken tenders halfway through baking for even cooking.
- Remove from the oven and let rest for a few minutes before serving.
- Serve with your favorite dipping sauces, such as tzatziki, honey mustard, or spicy aioli. Pair with a fresh Greek salad or roasted vegetables for a complete meal.
- If you have leftovers, let the chicken tenders cool completely before storing in an airtight container. They can be kept in the refrigerator for up to 3 days.
- To reheat, place them in the oven at 350°F (175°C) for about 10-15 minutes until warmed through.
Notes
- For extra flavor, consider adding fresh herbs like parsley or dill to the breadcrumb mixture.
- Adjust the spices according to your taste preference; feel free to add a pinch of cayenne for heat.
