- Score the Skin: Score the skin in a crosshatch pattern without cutting into the meat.
- Marinate the Pork Belly: In a bowl, mix soy sauce, hoisin sauce, rice vinegar, honey, five-spice powder, garlic powder, ginger powder, black pepper, and salt.
- Add the Pork Belly to the Marinade: Coat the scored pork belly in the marinade, cover, and refrigerate for at least 2 hours or overnight.
