Ingredients

Scale
  • 2 pounds pork belly, skin-on
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon five-spice powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • Wooden skewers (soaked in water for 30 minutes)
  • Fresh cilantro, for garnish
  • Chili flakes, for garnish (optional)

Instructions

  1. Choose the Right Cut: Select a good quality pork belly with a balance of meat and fat, ensuring the skin is intact for crispiness.
  2. Trim the Pork Belly: Trim excess fat from the pork belly, being careful not to remove too much.
  3. Score the Skin: Score the skin in a crosshatch pattern without cutting into the meat.
  4. Marinate the Pork Belly: In a bowl, mix soy sauce, hoisin sauce, rice vinegar, honey, five-spice powder, garlic powder, ginger powder, black pepper, and salt.
  5. Add the Pork Belly to the Marinade: Coat the scored pork belly in the marinade, cover, and refrigerate for at least 2 hours or overnight.
  6. Soak the Skewers: Soak wooden skewers in water for at least 30 minutes.
  7. Cut the Pork Belly: After marinating, cut the pork belly into 1-inch cubes.
  8. Skewer the Pork Belly: Thread the pork belly cubes onto the soaked skewers, leaving space between pieces.
  9. Preheat the Grill: Heat the grill to medium-high.
  10. Prepare the Grill Grates: Lightly oil the grill grates to prevent sticking.
  11. Grill the Skewers: Grill skewers skin side down for 5-7 minutes, then flip and grill for another 5-7 minutes, turning occasionally.
  12. Check for Doneness: Ensure the internal temperature reaches at least 145°F (63°C).
  13. Rest the Skewers: Let the skewers rest for 5 minutes after grilling.
  14. Garnish and Serve: Transfer to a platter, garnish with cilantro and chili flakes if desired.
  15. Enjoy: Serve warm as an appetizer or main dish, pairing well with rice or salad.

Notes

  • For best flavor, marinate the pork belly overnight.
