  • Yield: 4 servings 1x

Description

Crispy salmon bites coated in panko breadcrumbs make for a delicious appetizer or light meal. Seasoned with a blend of spices, these bites can be baked or fried to perfection, offering a satisfying crunch and flavor in every bite. Serve with lemon wedges for a refreshing touch.

Ingredients

Scale
  • 1 pound fresh salmon fillet, skin removed
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon hot sauce (optional, for extra heat)
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Rinse the salmon fillet under cold water and pat dry with paper towels.
  2. Cut the salmon into 1-inch bite-sized cubes.
  3. In a small bowl, mix garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Sprinkle this mixture over the salmon pieces, ensuring they are well-coated.
  4. Prepare three shallow bowls: one with all-purpose flour, one with whisked eggs, and one with panko breadcrumbs mixed with olive oil.
  5. Dip each salmon piece into the flour, then the egg, and finally roll in the panko breadcrumbs, pressing gently to adhere.
  6. Preheat the oven to 400°F (200°C) for baking or heat a skillet over medium-high heat for frying.
  7. For baking, line a baking sheet with parchment paper and arrange the salmon bites in a single layer. Bake for 12-15 minutes until golden brown.
  8. For frying, add oil to the skillet and fry the salmon bites in batches for 3-4 minutes on each side until crispy and golden.
  9. Once cooked, transfer the salmon bites to a plate lined with paper towels to drain excess oil.
  10. Plate the salmon bites, sprinkle with chopped parsley, and serve with lemon wedges and optional dipping sauce.

Notes

  • Use fresh salmon for the best flavor and texture.
  • Adjust the amount of cayenne pepper based on your heat preference.
  • For a quick dipping sauce, mix mayonnaise with hot sauce and lime juice.
