Ingredients
Scale
- 2 cups fresh broccoli florets, chopped
- 1 cup shredded cheddar cheese
- 1 cup milk
- 4 large eggs
- 1/2 cup diced onion
- 1/2 cup diced bell pepper (any color)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- 1 tablespoon olive oil or butter (for sautéing)
- 1/4 cup grated Parmesan cheese (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Wash the broccoli florets under cold water and chop them into small, bite-sized pieces.
- In a medium-sized skillet, heat the olive oil or butter over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until the onions are translucent and the peppers soften.
- Add the chopped broccoli to the skillet and sauté for another 3-4 minutes until bright green and slightly tender. Remove from heat and let cool slightly.
- In a large mixing bowl, crack the 4 large eggs and whisk until well combined and frothy.
- Pour in the 1 cup of milk and whisk until smooth.
- Add the garlic powder, salt, black pepper, and red pepper flakes (if using) to the egg mixture and stir well.
- Fold in the sautéed broccoli, onion, and bell pepper mixture until evenly coated.
- Gently fold in the 1 cup of shredded cheddar cheese.
- Grease a 9-inch pie dish or quiche pan with olive oil or cooking spray.
- Pour the vegetable and egg mixture into the prepared pie dish, spreading it evenly.
- Sprinkle the 1/4 cup of grated Parmesan cheese over the top.
- Bake in the preheated oven for 35-40 minutes, until the edges are set and the center is slightly jiggly but not liquid. A knife inserted into the center should come out clean.
- Remove from the oven and let cool for about 10 minutes before slicing.
- Serve warm or at room temperature, paired with a side salad or fresh fruit.
