  • 4 large eggs
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1 tablespoon olive oil or butter (for sautéing)
  • 1/4 cup grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash the broccoli florets under cold water and chop them into small, bite-sized pieces.
  3. In a medium-sized skillet, heat the olive oil or butter over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until the onions are translucent and the peppers soften.
  4. Add the chopped broccoli to the skillet and sauté for another 3-4 minutes until bright green and slightly tender. Remove from heat and let cool slightly.
  5. In a large mixing bowl, crack the 4 large eggs and whisk until well combined and frothy.
  6. Pour in the 1 cup of milk and whisk until smooth.
  7. Add the garlic powder, salt, black pepper, and red pepper flakes (if using) to the egg mixture and stir well.
  8. Fold in the sautéed broccoli, onion, and bell pepper mixture until evenly coated.
  9. Gently fold in the 1 cup of shredded cheddar cheese.
  10. Grease a 9-inch pie dish or quiche pan with olive oil or cooking spray.
  11. Pour the vegetable and egg mixture into the prepared pie dish, spreading it evenly.
  12. Sprinkle the 1/4 cup of grated Parmesan cheese over the top.
  13. Bake in the preheated oven for 35-40 minutes, until the edges are set and the center is slightly jiggly but not liquid. A knife inserted into the center should come out clean.
  14. Remove from the oven and let cool for about 10 minutes before slicing.
