  • 1 cup of ricotta cheese
  • 1/2 cup of honey
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of salt
  • 1 tablespoon of lemon juice
  • 1 tablespoon of cornstarch
  • 1/4 cup of chopped walnuts (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. In a large mixing bowl, combine the Greek yogurt and ricotta cheese. Whisk until smooth and creamy.
  2. Add the honey and mix well until fully incorporated.
  3. Crack in the eggs one at a time, mixing well after each addition.
  4. Add the vanilla extract, ground cinnamon, and salt. Mix until well combined.
  5. Squeeze in the lemon juice and sprinkle in the cornstarch. Mix until incorporated.
  6. If using, fold in the chopped walnuts gently.
  7. Preheat your oven to 350°F (175°C).
  8. Grease a 9-inch pie dish with butter or cooking spray, and optionally dust with flour or cornstarch.
  9. Pour the batter into the prepared pie dish and smooth the top with a spatula.
  10. Bake in the preheated oven for about 30-45 minutes, checking for doneness. The pie should be set in the center and slightly golden on top.
  11. Once done, remove from the oven and let cool in the dish for 10-15 minutes.
  12. Chill in the refrigerator for at least 2 hours or overnight.
  13. Before serving, dust with powdered sugar and add extra walnuts if desired. Slice and enjoy!
