- 1 cup of Greek yogurt
- 1 cup of ricotta cheese
- 1/2 cup of honey
- 3 large eggs
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of salt
- 1 tablespoon of lemon juice
- 1 tablespoon of cornstarch
- 1/4 cup of chopped walnuts (optional)
- Powdered sugar for dusting (optional)
Instructions
- In a large mixing bowl, combine the Greek yogurt and ricotta cheese. Whisk until smooth and creamy.
- Add the honey and mix well until fully incorporated.
- Crack in the eggs one at a time, mixing well after each addition.
- Add the vanilla extract, ground cinnamon, and salt. Mix until well combined.
- Squeeze in the lemon juice and sprinkle in the cornstarch. Mix until incorporated.
- If using, fold in the chopped walnuts gently.
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch pie dish with butter or cooking spray, and optionally dust with flour or cornstarch.
- Pour the batter into the prepared pie dish and smooth the top with a spatula.
- Bake in the preheated oven for about 30-45 minutes, checking for doneness. The pie should be set in the center and slightly golden on top.
- Once done, remove from the oven and let cool in the dish for 10-15 minutes.
- Chill in the refrigerator for at least 2 hours or overnight.
- Before serving, dust with powdered sugar and add extra walnuts if desired. Slice and enjoy!
