  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips (preferably 60% cocoa)
  • 1 cup fresh raspberries (or frozen, thawed and drained)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper for easy removal later.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large mixing bowl, combine the melted butter and granulated sugar. Blend until smooth and creamy.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.
  6. Fold in the dark chocolate chips, reserving a handful for topping if desired.
  7. Gently fold in the fresh raspberries, ensuring they are dry if using frozen.
  8. Pour the batter into the prepared baking pan, spreading it evenly.
  9. Sprinkle reserved chocolate chips on top if you set some aside.
  10. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  11. Remove from the oven and let cool in the pan for about 10 minutes.
  12. Carefully lift the bars out of the pan using parchment paper or loosen the edges with a knife before flipping onto a plate.
  13. Once cooled, cut into squares or rectangles (about 16 squares).
  14. Dust with powdered sugar if desired for presentation.
