Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup heavy cream
- 1 large egg
- 2 tablespoons Earl Grey tea leaves (or 2 tea bags)
- 1 teaspoon vanilla extract
- 1/4 cup milk (for brushing)
- Optional: powdered sugar for dusting
Instructions
- In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and granulated sugar. Whisk these dry ingredients together until well mixed.
- Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or a fork, cut the butter into the flour until the mixture resembles coarse crumbs.
- If using loose tea leaves, crush them slightly to release more flavor. Add the Earl Grey tea leaves to the flour mixture and stir to combine.
- In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well combined. Pour this wet mixture into the dry ingredients.
- Gently mix the wet and dry ingredients together using a spatula or your hands. Be careful not to overmix; the dough should come together but may be a bit crumbly.
- Turn the dough out onto a lightly floured surface. Gently knead it a few times until it holds together.
- Pat the dough into a circle about 1-inch thick.
- Using a sharp knife or a bench scraper, cut the dough into 8 equal wedges or use a round cutter for round scones.
- Place the scones on the prepared baking sheet, leaving some space between each one.
- Preheat your oven to 400°F (200°C). Brush the tops of the scones with milk.
- Bake for 15-20 minutes, or until the scones are golden brown on top. Check them at the 15-minute mark to avoid overbaking.
- Remove the scones from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Serve the scones warm or at room temperature. They are delightful on their own, but you can add butter or clotted cream on top.
- For an elevated experience, serve with homemade lemon curd or a dollop of jam.
Notes
- Ensure the butter is cold for the best flaky texture.
- Feel free to adjust the amount of Earl Grey tea to suit your taste preference.
- These scones can be stored in an airtight container for a few days, but they are best enjoyed fresh.
