Instructions

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and granulated sugar. Whisk these dry ingredients together until well mixed.
  2. Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or a fork, cut the butter into the flour until the mixture resembles coarse crumbs.
  3. If using loose tea leaves, crush them slightly to release more flavor. Add the Earl Grey tea leaves to the flour mixture and stir to combine.
  4. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well combined. Pour this wet mixture into the dry ingredients.
  5. Gently mix the wet and dry ingredients together using a spatula or your hands. Be careful not to overmix; the dough should come together but may be a bit crumbly.
  6. Turn the dough out onto a lightly floured surface. Gently knead it a few times until it holds together.
  7. Pat the dough into a circle about 1-inch thick.
  8. Using a sharp knife or a bench scraper, cut the dough into 8 equal wedges or use a round cutter for round scones.
  9. Place the scones on the prepared baking sheet, leaving some space between each one.
  10. Preheat your oven to 400°F (200°C). Brush the tops of the scones with milk.
