This colorful Fruit Pizza features a soft sugar cookie base topped with creamy cream cheese frosting and a variety of fresh fruits. It’s a delightful dessert perfect for any gathering, combining sweetness and freshness in every slice.

Ingredients

Scale
  • 1 package (16.5 oz) refrigerated sugar cookie dough
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (like Cool Whip)
  • 2 cups assorted fresh fruits (strawberries, blueberries, kiwi, bananas, etc.)
  • 1/4 cup fruit preserves (apricot or strawberry works well)
  • Optional: mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Take the refrigerated sugar cookie dough out of the package and place it in a large mixing bowl.
  3. Spread the cookie dough evenly onto a large pizza stone or a baking sheet lined with parchment paper, aiming for a thickness of about 1/4 inch and creating a slight edge around the perimeter.
  4. Bake the cookie base in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Let it cool completely on a wire rack.
  5. In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract.
  6. Using an electric mixer, beat the mixture on medium speed until smooth and creamy, about 2-3 minutes.
  7. Gently fold in the whipped topping using a spatula until well combined.
  8. Wash all the fresh fruits thoroughly under cold water and pat them dry.
  9. Slice strawberries, bananas, and kiwi into thin rounds. Leave blueberries whole.
  10. Arrange the prepared fruits on a cutting board or a large plate for easy assembly.
  11. Spread the cream cheese frosting evenly over the cooled cookie base using a spatula.
  12. Arrange the sliced strawberries in a circular pattern around the outer edge, alternating with kiwi and banana slices.
  13. Fill in the center with blueberries and any remaining fruit.
  14. Warm the fruit preserves in a small saucepan over low heat until liquid, then drizzle over the fruit.
  15. Gently glaze the fruit with the warmed fruit preserves.
  16. Cover the assembled fruit pizza with plastic wrap and refrigerate for at least 1 hour.
  17. Garnish with fresh mint leaves if desired.
  18. Slice the fruit pizza into wedges using a sharp knife or pizza cutter.
