Ingredients
Scale
- 1 package (16.5 oz) refrigerated sugar cookie dough
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped topping (like Cool Whip)
- 2 cups assorted fresh fruits (strawberries, blueberries, kiwi, bananas, etc.)
- 1/4 cup fruit preserves (apricot or strawberry works well)
- Optional: mint leaves for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Take the refrigerated sugar cookie dough out of the package and place it in a large mixing bowl.
- Spread the cookie dough evenly onto a large pizza stone or a baking sheet lined with parchment paper, aiming for a thickness of about 1/4 inch and creating a slight edge around the perimeter.
- Bake the cookie base in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Let it cool completely on a wire rack.
- In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract.
- Using an electric mixer, beat the mixture on medium speed until smooth and creamy, about 2-3 minutes.
- Gently fold in the whipped topping using a spatula until well combined.
- Wash all the fresh fruits thoroughly under cold water and pat them dry.
- Slice strawberries, bananas, and kiwi into thin rounds. Leave blueberries whole.
- Arrange the prepared fruits on a cutting board or a large plate for easy assembly.
- Spread the cream cheese frosting evenly over the cooled cookie base using a spatula.
- Arrange the sliced strawberries in a circular pattern around the outer edge, alternating with kiwi and banana slices.
- Fill in the center with blueberries and any remaining fruit.
- Warm the fruit preserves in a small saucepan over low heat until liquid, then drizzle over the fruit.
- Gently glaze the fruit with the warmed fruit preserves.
- Cover the assembled fruit pizza with plastic wrap and refrigerate for at least 1 hour.
- Garnish with fresh mint leaves if desired.
- Slice the fruit pizza into wedges using a sharp knife or pizza cutter.
