This Garlic Black Pepper Chicken is a quick and delicious dish featuring marinated chicken sautéed with garlic and black pepper. Perfect over rice or noodles, it’s garnished with fresh green onions for a flavorful meal that’s easy to prepare and sure to impress.

Ingredients

Scale
  • 1 lb (450g) boneless, skinless chicken thighs or breasts
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt (adjust to taste)
  • 2 green onions, chopped (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. Prepare the Chicken: Wash the chicken under cold water and pat dry with paper towels. Cut into bite-sized pieces (1 to 1.5 inches).
  2. Marinate the Chicken: In a large bowl, combine chicken pieces with soy sauce, oyster sauce, cornstarch, sugar, sesame oil, and salt. Mix well and let marinate for at least 30 minutes (1-2 hours for enhanced flavor).
  3. Prepare the Sauce: In a small bowl, mix minced garlic and freshly ground black pepper. Optionally, add a pinch of red pepper flakes for heat.
  4. Cook the Chicken: Heat a large skillet or wok over medium-high heat. Add vegetable oil and swirl to coat. Add marinated chicken in a single layer, cooking undisturbed for 4-5 minutes until golden brown.
  5. Stir and Finish Cooking: Stir the chicken and continue cooking for another 4-5 minutes until cooked through. Push chicken to one side of the skillet and add the garlic and black pepper mixture to the empty space. Sauté for 30 seconds until fragrant.
  6. Combine and Serve: Mix the garlic and black pepper into the chicken, cooking for an additional minute. Taste and adjust seasoning if necessary. Serve over cooked rice or noodles, garnished with chopped green onions.
