  • 1 pound of sirloin steak, cut into bite-sized pieces
  • 4 tablespoons of olive oil, divided
  • 4 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of dried oregano
  • 1 tablespoon of fresh parsley, chopped (for garnish)
  • Juice of 1 lemon

Instructions

  1. Cut the sirloin steak into bite-sized pieces, about 1-inch cubes.
  2. In a large mixing bowl, combine the steak pieces with salt, black pepper, smoked paprika, and dried oregano.
  3. Drizzle 2 tablespoons of olive oil over the seasoned steak and toss until well coated.
  4. Let the steak marinate for at least 15 minutes, or up to an hour in the refrigerator.
  5. Heat a cast-iron skillet over medium-high heat and add the remaining 2 tablespoons of olive oil.
  6. Add the marinated steak bites to the skillet in a single layer, avoiding overcrowding.
  7. Cook for about 2-3 minutes on one side without moving them to develop a crust.
  8. Flip the steak bites using tongs and add the minced garlic to the skillet.
  9. Continue cooking for another 2-3 minutes, or until the steak reaches your desired doneness (aim for medium-rare at 130°F/54°C).
  10. Remove from heat and squeeze the juice of one lemon over the steak bites.
  11. Transfer the steak bites to a serving platter in a single layer.
  12. Sprinkle chopped fresh parsley over the top for garnish.
  13. Serve immediately while warm, either as an appetizer or main dish with sides like roasted vegetables or salad.
  14. Optionally, serve with a dipping sauce like garlic aioli or chimichurri.
