Greek Lemon Potatoes: A Delicious Recipe for Authentic Mediterranean Flavor

  • Author: Dottie
  • Total Time: 60 minutes
  • Yield: 4-6 servings 1x

Description

These Greek Lemon Potatoes feature crispy, golden exteriors and tender interiors, marinated in a zesty blend of lemon, garlic, and oregano. Ideal as a side dish or main course, they add a vibrant burst of flavor to any meal.

Ingredients

Scale
  • 2 pounds of Yukon Gold potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1 cup vegetable or chicken broth
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel the Yukon Gold potatoes and cut them into wedges, about 1-2 inches thick. Rinse the wedges under cold water to remove excess starch, then pat them dry with a clean kitchen towel.
  3. In a large mixing bowl, combine the olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk until well combined.
  4. Add the potato wedges to the marinade and toss gently to coat each wedge evenly.
  5. Prepare a large baking dish or rimmed baking sheet (line with parchment paper if desired). Spread the marinated potato wedges in a single layer, ensuring they aren’t overcrowded.
  6. Pour the vegetable or chicken broth over the potatoes.
  7. Roast in the preheated oven for about 45 minutes, tossing the potatoes halfway through (around the 20-minute mark).
  8. Keep an eye on the potatoes during the last 10 minutes of roasting. They should be golden brown and crispy on the outside while remaining soft inside.
  9. Once done, remove from the oven and let cool for a few minutes. Sprinkle with freshly chopped parsley before serving.
  10. Serve warm as a side dish or main course, pairing beautifully with grilled meats, fish, or salads.

Notes

  • For extra flavor, add a teaspoon of lemon zest to the marinade.
  • A pinch of cinnamon can enhance the dish’s authenticity.
  • Experiment with different herbs like fresh thyme or rosemary for a unique twist.
  • For a vegan option, use vegetable broth instead of chicken broth.
  • For a bit of heat, consider adding a pinch of red pepper flakes.
