Instructions

  1. Prepare the Green Beans: Wash the green beans thoroughly under cold running water. Trim the ends by snapping them off or using a knife.
  2. Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until bright green and tender-crisp. Prepare an ice bath in a large bowl with ice and cold water.
  3. Ice Bath: Quickly transfer the green beans to the ice bath using a slotted spoon. Let them sit for 5 minutes, then drain and set aside.
  4. Toast the Almonds: In a dry skillet over medium heat, add the sliced almonds. Toast for 3-5 minutes, stirring frequently until golden brown and fragrant. Remove from skillet and set aside.
  5. Cook the Green Beans: In the same skillet, add the unsalted butter and olive oil over medium heat. Once melted and bubbling, add the minced garlic and sauté for 30 seconds until fragrant.
  6. Combine: Add the blanched green beans to the skillet, tossing them in the garlic butter mixture. Cook for 2-3 minutes, stirring occasionally.
  7. Season: Add lemon juice, salt, and pepper to taste. If using, sprinkle in lemon zest and toss to combine.
  8. Serve: Remove from heat and transfer the green beans to a serving platter. Sprinkle the toasted almonds over the top.
