Ingredients

  • 2 large halloumi cheese blocks (about 250g each)
  • 4 whole grain burger buns
  • 1 ripe avocado
  • 1 large tomato, sliced
  • 1 small red onion, thinly sliced
  • 1 cup mixed greens (arugula, spinach, or lettuce)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: 1/4 cup hummus or tzatziki for spreading
  • Optional: pickled jalapeños for a spicy kick

Instructions

  1. Slice the halloumi cheese into thick slices, about 1/2 inch each.
  2. In a small bowl, mix together the olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Brush both sides of the halloumi slices with the marinade and let sit for 10-15 minutes.
  4. Slice the tomato and red onion, and set aside.
  5. Cut the avocado in half, remove the pit, and mash the flesh in a bowl. Add a pinch of salt and a squeeze of lemon juice.
  6. Wash and dry the mixed greens.
  7. Heat a non-stick skillet or grill pan over medium-high heat.
  8. Add the halloumi slices and cook for 2-3 minutes on each side until golden brown and crispy.
  9. Remove from the pan and let rest on a paper towel.
  10. In the same skillet, toast the burger buns cut-side down for 1-2 minutes until golden and crispy.
  11. Spread a layer of mashed avocado on the bottom half of each toasted bun.
  12. Place a slice of crispy halloumi on top of the avocado.
  13. Add slices of tomato and red onion on top of the halloumi.
  14. Top with mixed greens and optional pickled jalapeños.
  15. Spread hummus or tzatziki on the top half of the bun and place it on top of the assembled burger.
