Enjoy these flavorful Halloumi Burgers featuring crispy halloumi, creamy avocado, and fresh veggies, all in a toasted whole grain bun. Ideal for a quick lunch or a hearty dinner!

- 2 large halloumi cheese blocks (about 250g each)
- 4 whole grain burger buns
- 1 ripe avocado
- 1 large tomato, sliced
- 1 small red onion, thinly sliced
- 1 cup mixed greens (arugula, spinach, or lettuce)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Optional: 1/4 cup hummus or tzatziki for spreading
- Optional: pickled jalapeños for a spicy kick
Instructions
- Slice the halloumi cheese into thick slices, about 1/2 inch each.
- In a small bowl, mix together the olive oil, garlic powder, smoked paprika, salt, and pepper.
- Brush both sides of the halloumi slices with the marinade and let sit for 10-15 minutes.
- Slice the tomato and red onion, and set aside.
- Cut the avocado in half, remove the pit, and mash the flesh in a bowl. Add a pinch of salt and a squeeze of lemon juice.
- Wash and dry the mixed greens.
- Heat a non-stick skillet or grill pan over medium-high heat.
- Add the halloumi slices and cook for 2-3 minutes on each side until golden brown and crispy.
- Remove from the pan and let rest on a paper towel.
- In the same skillet, toast the burger buns cut-side down for 1-2 minutes until golden and crispy.
- Spread a layer of mashed avocado on the bottom half of each toasted bun.
- Place a slice of crispy halloumi on top of the avocado.
- Add slices of tomato and red onion on top of the halloumi.
- Top with mixed greens and optional pickled jalapeños.
- Spread hummus or tzatziki on the top half of the bun and place it on top of the assembled burger.
