  • 1/4 cup honey
  • 1/4 cup soy sauce

  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 4 large tortillas (flour or whole wheat)
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup chopped green onions
  • Optional: sour cream or ranch dressing for serving

Instructions

  1. In a medium bowl, combine the honey, soy sauce, minced garlic, olive oil, ground ginger, black pepper, and salt. Whisk everything together until well blended.
  2. Cut the chicken breasts into bite-sized pieces.
  3. Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
  4. Heat a large skillet over medium-high heat and add a splash of olive oil.
  5. Remove the chicken from the marinade, allowing excess marinade to drip off. Reserve the marinade for later use.
  6. Add the chicken pieces to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through (internal temperature should reach 165°F/75°C).
  7. While the chicken is cooking, pour the reserved marinade into a small saucepan and bring it to a boil over medium heat.
  8. In a small bowl, mix the cornstarch with the water to create a slurry. Once the marinade is boiling, stir in the cornstarch mixture and cook for an additional 1-2 minutes until thickened. Remove from heat.
  9. Pour the thickened sauce over the cooked chicken in the skillet and stir to coat evenly. Let it simmer for another minute.
  10. Lay out your tortillas on a clean surface or large plate.
  11. Add a generous scoop of the honey garlic chicken mixture to the center of each tortilla, including some sauce.
  12. Top with shredded lettuce, diced tomatoes, shredded cheese, and chopped green onions. Add any other desired toppings.
  13. To wrap, fold in the sides and roll from the bottom up, tucking in the filling as you go. Roll tightly to prevent spillage.
