- 1 tablespoon cornstarch
- 2 tablespoons water

- In a medium bowl, combine the honey, soy sauce, minced garlic, olive oil, ground ginger, black pepper, and salt. Whisk everything together until well blended.
- Cut the chicken breasts into bite-sized pieces.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
- Heat a large skillet over medium-high heat and add a splash of olive oil.
- Remove the chicken from the marinade, allowing excess marinade to drip off. Reserve the marinade for later use.
- Add the chicken pieces to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through (internal temperature should reach 165°F/75°C).
- While the chicken is cooking, pour the reserved marinade into a small saucepan and bring it to a boil over medium heat.
- In a small bowl, mix the cornstarch with the water to create a slurry. Once the marinade is boiling, stir in the cornstarch mixture and cook for an additional 1-2 minutes until thickened. Remove from heat.
- Pour the thickened sauce over the cooked chicken in the skillet and stir to coat evenly. Let it simmer for another minute.
- Lay out your tortillas on a clean surface or large plate.
- Add a generous scoop of the honey garlic chicken mixture to the center of each tortilla, including some sauce.
- Top with shredded lettuce, diced tomatoes, shredded cheese, and chopped green onions. Add any other desired toppings.
- To wrap, fold in the sides and roll from the bottom up, tucking in the filling as you go. Roll tightly to prevent spillage.
- Place the wraps seam-side down on a plate. To keep warm, wrap in foil or place in a warm oven.
- Serve with a side of your favorite dipping sauce, like sour cream or ranch dressing.
