  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup honey
  • 1/4 cup Sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Cooked rice or noodles, for serving
  • Sesame seeds and chopped green onions, for garnish (optional)

Instructions

  1. Wash the chicken breasts under cold water and pat dry with paper towels.
  2. Cut the chicken into bite-sized pieces (about 1-inch cubes) and season with salt and pepper.
  3. In a bowl, combine honey, Sriracha sauce, soy sauce, rice vinegar, minced garlic, and ginger. Whisk until well blended.
  4. In a separate small bowl, mix cornstarch with water until smooth and set aside.
  5. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  6. Add the chicken in a single layer and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
  7. In the same skillet, add the remaining tablespoon of vegetable oil.
  8. Add sliced bell peppers, broccoli florets, and snap peas. Stir-fry for 3-4 minutes until tender-crisp.
  9. Add minced garlic and ginger, stir-frying for an additional 1-2 minutes until fragrant.
  10. Return the cooked chicken to the skillet and pour the honey-Sriracha sauce over the mixture, stirring to coat evenly.
  11. Add the cornstarch mixture and stir continuously for 2-3 minutes until the sauce thickens and becomes glossy. Adjust seasoning if necessary.
  12. Remove from heat and serve the stir-fry over cooked rice or noodles.
  13. Garnish with sesame seeds and chopped green onions if desired.
