- Prepare the Dough: In a heat-safe bowl, combine the brown sugar and boiling water. Stir until the sugar is completely dissolved.
- Add the Tapioca Starch: Gradually add the tapioca starch to the hot sugar water, mixing constantly with a fork or spatula.
- Knead the Dough: Once the mixture has cooled enough to handle (but is still warm), turn it out onto a lightly tapioca-floured surface. Knead the dough until it forms a smooth, elastic ball (5-10 minutes). Add more tapioca starch if too sticky, or a tiny bit of water if too dry.
- Shape the Boba: Pinch off small pieces of dough (about ¼ teaspoon each) and roll them into small, round balls. Dust your hands and the work surface with tapioca starch to prevent sticking.
- Prevent Sticking: As you shape the boba, place them in a bowl lightly dusted with tapioca starch. Toss them gently to coat them.
- Cook the Boba: Bring a large pot of water to a rolling boil. Gently add the boba to the boiling water.
- Cook Until Translucent: Once the boba float to the surface, reduce the heat to medium and cook for 15-20 minutes, stirring occasionally. Test one to make sure it’s cooked through.
- Rest and Rinse: Turn off the heat, cover the pot, and let the boba sit in the hot water for another 15 minutes.
- Rinse and Sweeten: Drain the boba and rinse them thoroughly under cold water.
- Soak in Simple Syrup: Transfer the cooked boba to a bowl and soak them in simple syrup for at least 30 minutes.
- Combine Sugar and Water: In a small saucepan, combine the granulated sugar and water.
- Heat and Dissolve: Heat the mixture over medium heat, stirring constantly, until the sugar is completely dissolved.
- Simmer and Cool: Bring the mixture to a simmer and let it simmer for 1-2 minutes. Remove from heat and let it cool completely.
- Store: Store the simple syrup in an airtight container in the refrigerator for up to 2 weeks.
- Brew the Green Tea: Brew the green tea according to the package instructions. Let the tea cool completely.
- Prepare the Honeydew Puree: In a blender or food processor, blend the cubed honeydew melon until smooth.
- Combine Tea and Honeydew: In a pitcher or large glass, combine the cooled green tea and the honeydew puree. Stir well to combine.
- Add Milk and Simple Syrup: Add the milk and simple syrup to the tea and honeydew mixture. Adjust to your taste.
- Chill (Optional): If you’re not serving the milk tea immediately, chill it in the refrigerator for at least 30 minutes.
- Add Boba to Glasses: Divide the cooked boba among your serving glasses (about ¼ cup per glass).
- Add Ice: Fill the glasses with ice cubes.
- Pour in Milk Tea: Pour the honeydew milk tea over the ice and boba.
- Stir and Serve: Stir gently to combine the boba and milk tea. Serve immediately with a wide straw.
