Ingredients
Scale
- 1 cup brewed coffee (cooled to room temperature)
- 1/2 cup milk (dairy or non-dairy, your choice)
- 1/4 cup pumpkin puree
- 2 tablespoons sugar (or sweetener of your choice)
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice (plus extra for garnish)
- Ice cubes
- Whipped cream (optional, for topping)
Instructions
- Brew a strong cup of coffee (about 1 cup) and let it cool to room temperature. If in a hurry, refrigerate for 15-20 minutes.
- In a medium mixing bowl, combine pumpkin puree, sugar, vanilla extract, and pumpkin pie spice. Whisk until smooth. Gradually add the cooled coffee, whisking continuously to blend well.
- Pour milk into a separate container. For frothy milk, use a milk frother or shake in a jar with a lid. Alternatively, heat in a saucepan over low heat while whisking until warm and slightly frothy.
- Fill a tall glass with ice cubes. Pour the pumpkin coffee mixture over the ice, filling the glass about two-thirds full. Gently pour the frothed milk over the coffee mixture.
- Top with whipped cream if desired, and sprinkle a pinch of pumpkin pie spice on top. Stir gently before enjoying.
Notes
- Adjust sweetness by modifying the amount of sugar or sweetener.
- For a stronger coffee flavor, add an extra shot of espresso or use cold brew coffee.
- To make it dairy-free, substitute milk with a non-dairy alternative and use dairy-free whipped cream if desired.
- Store any leftover pumpkin spice mixture in an airtight container in the refrigerator for up to a week.
