  • 1 small onion, finely chopped
  • 1/2 cup panko breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil (for frying)
  • 1/2 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. In a small bowl, combine the panko breadcrumbs and milk. Let it sit for about 10 minutes until the breadcrumbs absorb the milk and become soft.
  2. Finely chop the onion and sauté in a small pan over medium heat with a little oil until translucent, about 5 minutes. Let cool slightly.
  3. In a large mixing bowl, combine the ground beef, soaked panko, sautéed onions, egg, soy sauce, Worcestershire sauce, salt, and black pepper. Mix gently with your hands, being careful not to overwork the meat.
  4. Divide the mixture into four equal portions and shape each into a patty, about 1 inch thick. Make a small indentation in the center of each patty.
  5. Heat vegetable oil in a large skillet over medium-high heat. Place the patties in the skillet, ensuring not to overcrowd.
  6. Cook for 4-5 minutes on one side until browned, then flip and reduce heat to medium. Cook for another 4-5 minutes.
  7. Check for doneness with a meat thermometer (internal temperature should reach 70°C/160°F) or cut one open to ensure it’s no longer pink.
  8. Remove patties from the skillet and cover with aluminum foil to keep warm.
  9. In the same skillet, reduce heat to medium-low and add ketchup, Worcestershire sauce, soy sauce, sugar, and Dijon mustard (if using).
  10. Stir well, scraping up browned bits from the pan. Let simmer for 3-4 minutes until slightly thickened.
  11. Taste and adjust seasoning if necessary.
  12. Serve each hamburger steak on a plate and spoon sauce over the top.
  13. Pair with steamed rice and sautéed vegetables, and garnish with chopped green onions or sesame seeds.
