  • 2 ripe mangoes, peeled and diced
  • 1 cup coconut cream
  • 1 cup pineapple juice
  • 1 cup ice cubes
  • 1/2 cup white rum (optional)
  • 1 tablespoon lime juice
  • Fresh mint leaves for garnish
  • Extra mango slices for garnish

Instructions

  1. Select ripe mangoes that are slightly soft to the touch. Peel the mangoes with a sharp knife, avoiding the pit, and cut the flesh into 1-inch cubes. Place the diced mangoes into a blender.
  2. Add 1 cup of coconut cream to the blender with the mango. Pour in 1 cup of pineapple juice. If desired, add 1/2 cup of white rum for a cocktail version. Squeeze in 1 tablespoon of fresh lime juice.
  3. Add 1 cup of ice cubes to the blender. Secure the lid and blend on high speed for 30-45 seconds until smooth and creamy. Check the consistency; if too thick, add more pineapple juice or coconut cream and blend again.
  4. Taste the mixture and adjust sweetness with more pineapple juice or simple syrup, or add more lime juice for tanginess. Blend again briefly to incorporate any adjustments.
  5. Pour the mango colada mixture into tall glasses, filling them about three-quarters full. Garnish with a slice of fresh mango on the rim and a few fresh mint leaves on top.
  6. Serve immediately with a straw or cocktail stirrer. Take a moment to appreciate the vibrant colors and tropical aroma before sipping slowly to enjoy the refreshing flavors.
