Description
Enjoy a refreshing Mango Colada made with ripe mangoes, creamy coconut, and pineapple juice, perfect for summer gatherings. Optional white rum adds a delightful kick, making it a versatile treat for all. Garnish with fresh mint and mango slices for a tropical touch!
Ingredients
Scale
- 2 ripe mangoes, peeled and diced
- 1 cup coconut cream
- 1 cup pineapple juice
- 1 cup ice cubes
- 1/2 cup white rum (optional)
- 1 tablespoon lime juice
- Fresh mint leaves for garnish
- Extra mango slices for garnish
Instructions
- Select ripe mangoes that are slightly soft to the touch. Peel the mangoes with a sharp knife, avoiding the pit, and cut the flesh into 1-inch cubes. Place the diced mangoes into a blender.
- Add 1 cup of coconut cream to the blender with the mango. Pour in 1 cup of pineapple juice. If desired, add 1/2 cup of white rum for a cocktail version. Squeeze in 1 tablespoon of fresh lime juice.
- Add 1 cup of ice cubes to the blender. Secure the lid and blend on high speed for 30-45 seconds until smooth and creamy. Check the consistency; if too thick, add more pineapple juice or coconut cream and blend again.
- Taste the mixture and adjust sweetness with more pineapple juice or simple syrup, or add more lime juice for tanginess. Blend again briefly to incorporate any adjustments.
- Pour the mango colada mixture into tall glasses, filling them about three-quarters full. Garnish with a slice of fresh mango on the rim and a few fresh mint leaves on top.
- Serve immediately with a straw or cocktail stirrer. Take a moment to appreciate the vibrant colors and tropical aroma before sipping slowly to enjoy the refreshing flavors.
Notes
- For make-ahead convenience, prepare the mango mixture and store it in the refrigerator for a few hours. Blend again before serving to refresh the texture.
- Experiment with other fruits like strawberries or bananas for a unique flavor twist.
- For a healthier option, use light coconut milk instead of coconut cream and reduce added sugar.
