Ingredients

Scale
  • 2 ripe mangoes, peeled and diced
  • 1/4 cup fresh lime juice (about 23 limes)
  • 1 tablespoon lime zest
  • 1/2 cup granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 packet (about 2 1/4 teaspoons) unflavored gelatin
  • 2 tablespoons cold water
  • Fresh mint leaves for garnish (optional)
  • Extra mango slices for garnish (optional)

Instructions

  1. Prepare the mango puree by peeling and dicing the mangoes, blending them with lime juice and zest until smooth, and adjusting sweetness if needed.
  2. Prepare the gelatin by blooming it in cold water, then dissolving it in the microwave and letting it cool slightly.
  3. Whip the heavy cream with vanilla and sugar until soft peaks form.
  4. Fold the gelatin into the mango puree, then gently fold in the whipped cream in two additions to maintain airiness.
  5. Divide the mousse into serving cups, cover, and chill for at least 4 hours or overnight until set.
  6. Garnish with mint leaves and mango slices before serving.

Notes

  • For a sweeter mousse, adjust the sugar in the mango puree to taste.
  • Ensure the gelatin is not too hot when added to the puree to avoid cooking it.
