- 2 ripe mangoes, peeled and diced
- 1/4 cup fresh lime juice (about 2–3 limes)
- 1 tablespoon lime zest
- 1/2 cup granulated sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1 packet (about 2 1/4 teaspoons) unflavored gelatin
- 2 tablespoons cold water
- Fresh mint leaves for garnish (optional)
- Extra mango slices for garnish (optional)
Instructions
- Prepare the mango puree by peeling and dicing the mangoes, blending them with lime juice and zest until smooth, and adjusting sweetness if needed.
- Prepare the gelatin by blooming it in cold water, then dissolving it in the microwave and letting it cool slightly.
- Whip the heavy cream with vanilla and sugar until soft peaks form.
- Fold the gelatin into the mango puree, then gently fold in the whipped cream in two additions to maintain airiness.
- Divide the mousse into serving cups, cover, and chill for at least 4 hours or overnight until set.
- Garnish with mint leaves and mango slices before serving.
Notes
- For a sweeter mousse, adjust the sugar in the mango puree to taste.
- Ensure the gelatin is not too hot when added to the puree to avoid cooking it.
- This mousse can be made a day in advance for convenience.
