Ingredients

  • 1 cup frozen pineapple chunks
  • 1/2 cup plain Greek yogurt
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup orange juice (freshly squeezed recommended)
  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 1/4 teaspoon ground ginger (optional)
  • A few ice cubes (optional, if needed)
  • Optional toppings: shredded coconut, chia seeds, mango or pineapple slice

Instructions

  1. Prep the Mango: Peel the mango. Stand the mango on its end and slice down along the pit. Score the flesh of each cheek in a grid pattern, being careful not to cut through the skin. Invert the cheek and use a spoon to scoop out the mango cubes.
  2. Combine Ingredients: Add the cubed mango, frozen pineapple chunks, Greek yogurt, milk, orange juice, honey (or maple syrup), and ground ginger (if using) to a blender.
  3. Blend Until Smooth: Blend on low speed to start, then increase to high. Blend until completely smooth and creamy, about 30-60 seconds. If too thick, add milk, 1 tablespoon at a time. If not cold enough, add ice cubes and blend again.
  4. Taste and Adjust: Taste and adjust sweetness with more honey/maple syrup, tanginess with lime juice, or richness with coconut milk.
  5. Pour and Serve: Pour into a glass or two. Garnish with shredded coconut, chia seeds, or a slice of mango or pineapple (optional). Serve immediately.

  • For a thicker smoothie, use more frozen pineapple or add a few more ice cubes.
