  • 2 ripe mangoes, peeled and diced
  • 1 pomelo, segmented and chopped
  • 1 can (400ml) coconut milk
  • 1 cup water
  • 1/2 cup sugar (adjust to taste)
  • 1/2 teaspoon salt
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium-sized pot, bring 4 cups of water to a boil.
  2. Once boiling, add the sago pearls and stir gently to prevent sticking.
  3. Reduce heat to medium and cook for 10-15 minutes until translucent, stirring occasionally.
  4. Turn off the heat, cover, and let sit for another 10 minutes.
  5. Drain the sago pearls in a fine mesh strainer and rinse under cold water. Set aside.
  6. In a saucepan, combine coconut milk, 1 cup of water, sugar, and salt.
  7. Heat over medium, stirring until sugar dissolves completely (do not boil).
  8. Remove from heat and let cool for a few minutes.
  9. In a large mixing bowl, combine cooked sago pearls with the cooled coconut milk mixture.
  10. Gently fold in diced mangoes and chopped pomelo segments.
  11. Taste and adjust sweetness if desired.
  12. Cover and refrigerate for at least 1 hour.
  13. Stir gently before serving to distribute ingredients.
  14. Scoop into individual bowls or glasses.
  15. Garnish with fresh mint leaves if desired.
