Enjoy a delightful Mango Pomelo Sago dessert that combines chewy sago pearls, sweet mangoes, and zesty pomelo in a creamy coconut milk base. This refreshing treat is perfect for warm days or as a light dessert to end any meal.

- 1 cup sago pearls
- 2 ripe mangoes, peeled and diced
- 1 pomelo, segmented and chopped
- 1 can (400ml) coconut milk
- 1 cup water
- 1/2 cup sugar (adjust to taste)
- 1/2 teaspoon salt
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium-sized pot, bring 4 cups of water to a boil.
- Once boiling, add the sago pearls and stir gently to prevent sticking.
- Reduce heat to medium and cook for 10-15 minutes until translucent, stirring occasionally.
- Turn off the heat, cover, and let sit for another 10 minutes.
- Drain the sago pearls in a fine mesh strainer and rinse under cold water. Set aside.
- In a saucepan, combine coconut milk, 1 cup of water, sugar, and salt.
- Heat over medium, stirring until sugar dissolves completely (do not boil).
- Remove from heat and let cool for a few minutes.
- In a large mixing bowl, combine cooked sago pearls with the cooled coconut milk mixture.
- Gently fold in diced mangoes and chopped pomelo segments.
- Taste and adjust sweetness if desired.
- Cover and refrigerate for at least 1 hour.
- Stir gently before serving to distribute ingredients.
- Scoop into individual bowls or glasses.
- Garnish with fresh mint leaves if desired.
- Serve immediately and enjoy!
