  • 1 cup small tapioca pearls (sago)
  • 2 cups water (for boiling sago)
  • 1 can (400ml) coconut milk
  • 1 cup fresh mango puree (about 2 ripe mangoes)
  • 1/2 cup sugar (adjust to taste)
  • 1/2 teaspoon salt
  • 1 cup diced fresh mango (for topping)
  • Mint leaves (for garnish, optional)

Instructions

  1. Rinse the small tapioca pearls under cold water to remove excess starch.
  2. In a medium pot, bring 2 cups of water to a boil over medium heat. Add the rinsed sago pearls.
  3. Stir gently to prevent sticking and cook for 10-15 minutes until translucent.
  4. Remove from heat and let sit in hot water for an additional 10 minutes.
  5. Drain the sago pearls in a fine mesh strainer and rinse under cold water. Set aside to cool.
  6. In a separate saucepan, pour in the coconut milk. Add sugar and salt, stirring well.
  7. Heat over low heat, stirring occasionally until sugar dissolves. Do not boil.
  8. Remove from heat and let cool slightly.
  9. Peel the ripe mangoes and remove the pit.
  10. Cut the mango flesh into chunks and blend until smooth. Adjust sweetness if necessary.
  11. Blend again if you add sugar.
  12. In a large mixing bowl, combine the cooked sago pearls and coconut milk mixture. Stir gently.
  13. Add the mango puree and mix until well combined. Adjust sweetness if needed.
  14. Cover the bowl with plastic wrap or transfer to individual serving cups.
  15. Refrigerate for at least 2 hours until chilled.
  16. After chilling, stir the mixture gently if in a large bowl.
  17. Scoop into individual bowls or dessert cups, topping with diced fresh mango.
