- 1 cup small tapioca pearls (sago)
- 2 cups water (for boiling sago)
- 1 can (400ml) coconut milk
- 1 cup fresh mango puree (about 2 ripe mangoes)
- 1/2 cup sugar (adjust to taste)
- 1/2 teaspoon salt
- 1 cup diced fresh mango (for topping)
- Mint leaves (for garnish, optional)
Instructions
- Rinse the small tapioca pearls under cold water to remove excess starch.
- In a medium pot, bring 2 cups of water to a boil over medium heat. Add the rinsed sago pearls.
- Stir gently to prevent sticking and cook for 10-15 minutes until translucent.
- Remove from heat and let sit in hot water for an additional 10 minutes.
- Drain the sago pearls in a fine mesh strainer and rinse under cold water. Set aside to cool.
- In a separate saucepan, pour in the coconut milk. Add sugar and salt, stirring well.
- Heat over low heat, stirring occasionally until sugar dissolves. Do not boil.
- Remove from heat and let cool slightly.
- Peel the ripe mangoes and remove the pit.
- Cut the mango flesh into chunks and blend until smooth. Adjust sweetness if necessary.
- Blend again if you add sugar.
- In a large mixing bowl, combine the cooked sago pearls and coconut milk mixture. Stir gently.
- Add the mango puree and mix until well combined. Adjust sweetness if needed.
- Cover the bowl with plastic wrap or transfer to individual serving cups.
- Refrigerate for at least 2 hours until chilled.
- After chilling, stir the mixture gently if in a large bowl.
- Scoop into individual bowls or dessert cups, topping with diced fresh mango.
