Crispy and cheesy mashed potato puffs that are perfect for using up leftovers, making a delicious snack or appetizer. Customize with your favorite cheese and spices, and serve with a variety of dipping sauces.

- 2 cups of mashed potatoes (preferably leftover)
- 1 cup of shredded cheese (cheddar, mozzarella, or your favorite)
- 1/2 cup of all-purpose flour
- 1/4 cup of grated Parmesan cheese
- 1 large egg
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of paprika (optional, for a little kick)
- Oil for frying (vegetable or canola oil works well)
- Fresh herbs for garnish (optional, such as chives or parsley)
Instructions
- In a large mixing bowl, combine the mashed potatoes with the shredded cheese.
- Add the flour, grated Parmesan cheese, and egg to the mixture.
- Sprinkle in the garlic powder, onion powder, salt, black pepper, and paprika (if using).
- Mix everything together until well combined. The mixture should be thick and hold together.
- Shape the mixture into small balls or patties and place them on a parchment-lined baking sheet.
- In a large skillet, heat enough oil to cover the bottom of the pan by about 1/2 inch over medium heat.
- Test the oil by dropping a small piece of the mixture into it; if it sizzles, its ready.
- Fry the puffs in batches of 4-5 for about 3-4 minutes on each side until golden brown and crispy.
- Remove the cooked puffs and place them on a plate lined with paper towels to absorb excess oil.
- Repeat the frying process with the remaining puffs.
- Transfer the puffs to a serving platter and garnish with fresh herbs if desired. Serve warm with your favorite dipping sauce.

- Feel free to customize the cheese and spices to your liking.
- You can also add cooked bacon bits or chopped vegetables for extra flavor and texture.
- If you want to make these puffs ahead of time, you can shape them and freeze them before frying.
