- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup white chocolate chips (optional)
- 1/2 cup chopped nuts (like macadamia or walnuts, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the all-purpose flour, matcha powder, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
- Gradually add the dry ingredients to the wet mixture in three parts, mixing on low speed until just combined.
- If using, gently fold in the white chocolate chips and/or chopped nuts.
- Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.
- Line a baking sheet with parchment paper.
- Scoop out portions of the dough (about 1.5 inches in diameter) and roll them into balls. Place them on the prepared baking sheet, leaving about 2 inches of space between each ball.
- Optionally, sprinkle a pinch of matcha powder on top of each cookie ball before baking.
- Bake the cookies in the preheated oven for 10-12 minutes, until the edges are set but the centers remain soft.
- Remove the baking sheet from the oven and let the cookies cool on the sheet for about 5 minutes.
- Transfer the cookies to a wire rack to cool completely.
- Store the cooled cookies in an airtight container at room temperature for up to a week.
- For longer storage, freeze the cookies in a single layer on a baking sheet until solid, then transfer to a freezer-safe bag or container. They can be frozen for up to three months.
