Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1 cup heavy whipping cream
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions

  1. In a microwave-safe bowl, add the 1 cup of semi-sweet chocolate chips.
  2. Microwave the chocolate chips in 30-second intervals, stirring in between, until they are completely melted and smooth (about 1 to 1.5 minutes total). Be careful not to overheat the chocolate.
  3. Let the melted chocolate cool for about 5 minutes.
  4. In a large mixing bowl, add 1 cup of creamy peanut butter.
  5. Add 1/4 cup of powdered sugar to the peanut butter.
  6. Pour in 1 teaspoon of vanilla extract and a pinch of salt.
  7. Mix until smooth and creamy using a hand mixer or whisk (about 2-3 minutes).
  8. Pour the cooled melted chocolate into the peanut butter mixture.
  9. Gently fold the chocolate into the peanut butter using a spatula until fully incorporated.
  10. In a separate mixing bowl, pour in 1 cup of heavy whipping cream.
  11. Whip the cream on medium-high speed until soft peaks form (about 3-5 minutes).
  12. Gradually add the whipped cream to the chocolate-peanut butter mixture, folding gently with a spatula until fully incorporated.
  13. Transfer the mousse into individual serving cups or a large bowl.
  14. Cover with plastic wrap or a lid and refrigerate for at least 2 hours, or until set.
  15. Remove the mousse from the refrigerator and uncover it.
  16. Top each serving with chocolate shavings or a dusting of cocoa powder, if desired.
