Instructions

  1. In a medium saucepan, combine the water, unsalted butter, and salt. Place it over medium heat and bring to a gentle boil, stirring occasionally until the butter melts completely.
  2. Once boiling, remove from heat and add the all-purpose flour all at once. Stir vigorously with a wooden spoon until the dough forms a ball, about 1-2 minutes.
  3. Allow the dough to cool for about 5 minutes to prevent the eggs from cooking when added.
  4. After cooling, add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  5. Stir in the vanilla extract and ground cinnamon for flavor.
  6. Fold in the chopped nuts for added crunch.
  7. In a deep frying pan or heavy-bottomed pot, pour enough vegetable oil to fill it about 2 inches deep. Heat the oil over medium heat until it reaches 350°F (175°C). Test readiness by dropping a small piece of dough into the oil; it should sizzle and rise.
  8. Using a piping bag fitted with a large star tip, fill it with the churro dough. Alternatively, use a zip-top bag with the corner snipped off.
  9. Pipe small bite-sized pieces of dough (about 1 inch long) into the hot oil, frying in batches to avoid overcrowding.
  10. Fry for about 2-3 minutes on each side until golden brown and puffed. Use a slotted spoon to turn them gently.
  11. Remove the churro bites from the oil and place them on a plate lined with paper towels to drain excess oil.
  12. In a shallow bowl, combine granulated sugar and a pinch of ground cinnamon. Roll the warm churro bites in this mixture until fully coated.
