  • 1 pound ground beef (80/20 blend for juiciness)
  • 1 medium onion, thinly sliced
  • 4 slices of Swiss cheese (or American cheese, if preferred)
  • 4 slices of rye bread (or your choice of bread)
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • Optional: pickles or mustard for serving

Instructions

  1. In a large mixing bowl, combine the ground beef with Worcestershire sauce, salt, and pepper. Mix gently with your hands to avoid overworking the meat.
  2. Divide the beef into four equal portions and shape them into patties, slightly larger than the bread.
  3. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions and cook, stirring occasionally, for 10-15 minutes until caramelized and golden brown. If they stick, add a splash of water.
  4. Remove the onions from the skillet and keep warm.
  5. In the same skillet, add more butter if needed and increase the heat to medium-high. Add the beef patties and cook for 3-4 minutes on one side without moving them.
  6. Flip the patties and cook for another 3 minutes. In the last minute, place a slice of cheese on each patty and cover to melt.
  7. Spread softened butter on one side of each slice of bread. On the unbuttered side of one slice, place a beef patty with melted cheese, top with caramelized onions, and add pickles or mustard if desired. Place another slice of bread on top, buttered side facing out. Repeat for remaining patties.
  8. Heat the skillet over medium heat. Grill the assembled sandwiches for 3-4 minutes on one side until golden brown, pressing down gently with a spatula.
  9. Flip and grill the other side for another 3-4 minutes until crispy. Remove from skillet and let rest for a minute before slicing.
  10. Slice the patty melts in half and serve warm with extra pickles or mustard on the side.
