Description

Enjoy a taste of summer with this Peach Raspberry Cobbler, featuring juicy peaches and tart raspberries topped with a buttery, fluffy crust. Serve warm with vanilla ice cream or whipped cream for a delightful dessert experience!

Ingredients

Scale
  • 4 cups fresh peaches, peeled and sliced
  • 2 cups fresh raspberries
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon almond extract (optional)
  • 1/4 cup brown sugar (for topping)
  • Vanilla ice cream or whipped cream (for serving, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced peaches and fresh raspberries. If using frozen fruit, ensure they are thawed and drained.
  3. Add 1/2 cup of granulated sugar, lemon juice, vanilla extract, ground cinnamon, and salt to the fruit mixture. Gently toss until the fruit is well coated.
  4. Let the fruit mixture sit for about 10-15 minutes to allow the flavors to meld and juices to develop.
  5. In a separate mixing bowl, whisk together the flour, remaining 1/2 cup of granulated sugar, and baking powder.
  6. In another bowl, combine the melted butter, milk, and almond extract (if using). Whisk until well blended.
  7. Pour the wet ingredients into the dry ingredients and stir gently until just combined. A few lumps are fine.
  8. Pour the fruit mixture into a greased 9×13-inch baking dish, spreading it evenly.
  9. Spoon the batter over the fruit mixture, dolloping it in different spots for a rustic look.
  10. Sprinkle the brown sugar evenly over the top of the batter.
  11. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  12. Remove from the oven and let cool for about 10-15 minutes before serving.
  13. Scoop generous portions into bowls and top with vanilla ice cream or whipped cream, if desired.
  14. Enjoy warm and savor the delightful combination of sweet peaches, tart raspberries, and buttery cobbler!

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave.
  • For longer storage, freeze the cobbler after it has cooled completely, wrapping it tightly in plastic wrap and aluminum foil.
